Tasting Notes:
- Nose: Dominant barley and cereal notes with hints of honey, floral notes, vanilla, orange zest, mushy bananas, and raw sugar. A touch of chalk and lingering spices in the background.
- Palate: Thick, oily, and spicy with prominent oak and heat. Flavors of cloves, pepper, cherries, quinces, pear skin, and dried apricots.
- Finish: Dry but sweet, with notes of port-stewed pears and a lingering spiciness.
Waterford Organic Gaia 1.1 is part of the distillery’s Arcadian Series and is Ireland’s first organically certified whiskey. This release is distilled from organic barley grown by a collective of farmers and represents Waterford’s commitment to exploring the impact of terroir on whisky flavor. The maturation in a diverse mix of casks adds complexity and depth to its profile.
