Milk & Honey Distillery
Milk & Honey Distillery, founded in 2013 in Tel Aviv, is Israel’s first whisky distillery. A group of whisky enthusiasts started it, guided by Dr. Jim Swan, a renowned expert in whisky maturation. The distillery uses traditional Scottish techniques combined with modern processes to produce high-quality single malt whisky.
Milk & Honey ages its whisky in various casks, including ex-bourbon, ex-sherry, and STR (Shave, Toast, Rechar) casks. These are well-suited for hot climates. The distillery takes advantage of Israel’s diverse climates by aging whisky in different regions, such as the hot Dead Sea area and cooler Jerusalem mountains. This method results in a complex whisky profile despite the young age of the spirits.
Producing around 170,000 liters of pure alcohol annually, Milk & Honey offers a range of products like their Classic Single Malt and various experimental expressions. In 2023, their Elements Sherry Cask whisky won the World’s Best Single Malt Whisky at the World Whiskies Awards. The distillery also has a visitor center offering tours that showcase the whisky-making process and tastings of their products.
