Highland Park Distillery

Highland Park Distillery, founded in 1798 by David Robertson, sits in Kirkwall on the Orkney Islands. Known for its aromatic peat smoke, the distillery uses hand-cut peat from Hobbister Moor. This peat, rich in heather, contributes to the whisky’s distinctive flavor. The malt is partially produced using traditional floor maltings, a rare practice in modern distilleries.

The distillery sources water from Cattie Maggie’s Spring. Highland Park employs four pot stills, two wash and two spirit stills, creating a medium-heavy new make spirit. The whisky matures in American and European oak casks, primarily sherry-seasoned, adding rich, fruity flavors.

Highland Park’s core range includes the 12 Year Old and 18 Year Old expressions. The distillery also produces special editions like the Viking Series, honoring its Norse heritage. Annually, Highland Park produces 2.5 million liters of whisky.
