Chichibu Distillery
Founded in 2008 by Ichiro Akuto, Chichibu Distillery is located in Saitama Prefecture, Japan. Known for its innovative and high-quality whiskies, Chichibu has quickly gained a reputation among whisky enthusiasts worldwide. The distillery is small but highly efficient, producing around 90,000 liters of whisky annually. Chichibu employs traditional methods, including floor malting and using Mizunara oak washbacks, which contribute to the unique flavor profiles of its whiskies.
Chichibu offers a variety of expressions, including “The First,” “The Peated,” and “On the Way,” each showcasing different aspects of their whisky-making expertise. The distillery’s commitment to quality and innovation is evident in their use of various cask types for maturation, such as bourbon, sherry, and local Mizunara oak. This approach not only enhances the complexity of their whiskies but also preserves a distinct Japanese character.
